Pasta with Creamy Chipotle Sauce


Remember my creamy cashew chipotle sauce that I made last week for Super Bowl Sunday? Well it also tastes great heated and mixed in some carbs in the form of what else other than pasta? Especially on a cold Winter day when all you want is some warmth; and what better way to find this type of comfort than in a bowl of spicy, nourishing food? If you're thinking there is no other way, then great minds think alike because those are my exact thoughts.

If you are impartial to pasta because you are either (A) crazy because you don't like pasta or (B) on a low carb diet or (C) have an intolerance to all kinds of variations of pasta, if this is you, I am very sorry. But, if you relate to any of these, the sauce can also be used on the following options; smothered on top of a baked potato stuffed with beans & veggies. Whether you use a regular potato or sweet potato is completely up to you. It can also be used to top up some home fries, mixed in salads with fresh squeezed lime, as a sauce on a sandwich, to top off a buddha bowl, in a taco/burrito/quesadilla or even as a queso cheeze to top up some nachos, rice or cauli rice for those low carbers out there.

Now, I find that this sauce is better heated, and to heat the sauce I would not put directly in a pan unless I'm mixing something with it, such as pasta; because it will stick. But, it can be put in a heat resistant plastic jar with a lid (I use my Black Ninja blender jars) and then I put them directly in boiling water to heat up. You can also put the sauce in a bowl over a pan with boiling water and it will heat up. Either of these methods you need to be very careful not to burn yourself. Take the extra steps to use oven mitts and/or tongs to take the jar out of the boiling water. Open the jar with oven mitts and while still wearing gloves pour the sauce over your food. Make sure that you do not directly touch the jar as it will still be hot from being heated in boiling water. This is all obvious, but I have to put it out there for my sanity's sake. You can't say I didn't warn you. :) If you're going with the bowl option, make sure you choose one that sits well in the pot and doesn't wobble too much. Once heated, use a spoon and pour over your food.

The only item I wouldn't heat this sauce up for is if you're using it as a salad dressing. In this case, it is definitely better off cold. Also! Please leave a comment if you can think of something wonderful that this sauce would be good for. All suggestions are appreciated. 🙏🏼
