Double Chocolate Chip Cookies


Mmmmm double chocolate chip cookies! Cookie Monster worthy, fo sho! These were inspired from my double chocolate chip muffins that I made last week, which were also seriously delicious. When you take chocolate and you double it, how can you go wrong? You just can't. I'm all about those win/win situations and this is one of them. 

First step is to pre-heat oven to 350 F. 

Second step is to put the dry ingredients in a bowl. They consist of; 

  • 2 cups of all purpose white flour
  • 1 cup of coconut sugar 
  • 1/4 cup cacao powder 
  • 1 tsp baking powder 
  • 1 tsp baking soda 
  • 1/2 tsp of salt 


Once all of the above ingredients are combined. Add the wet ingredients, which include; 

  • 3/8 cup (6 TBSP) of soy milk which = 1/4 cup + 2 TBSP
  • 1/2 cup olive or coconut oil 
  • 2 tsp's of vanilla extract 


Mix all ingredients together with 1/2 cup of Vegan chocolate chips. Once all mixed together form equal sized balls, pat down slightly to form cookie shape and top with chocolate chips. Put on parchment paper and cook for 8 - 10 minutes. This will make anywhere between 25 - 30 cookies depending on the size. If you want bigger cookies, it will obviously make less. 

FYI - if you don't want to use 1/2 cup of oil, you can always use 1/4 cup oil and 1/4 cup maple syrup.
