Trifecta Fried Rice



Sweet, sour and spicy! It's the trifecta of fried rice. Not only does it have the 3 essential S's that I look for in fried rice, but it also has the combination of rice, pineapple and lentils. Total yum factor! Although, be warned that the homemade sauce is not sugar free. For a reduced sugar option I think it would still taste good using olive oil, soy sauce or Teriyaki and possibly some orange zest? I haven't tried that option, but if you do let me know. Now I'm curious. I might actually have to make it for myself. 



Before anything, start cooking your rice and dry green lentils. Before cooking either, rinse both separately in a strainer in cold water. Depending on what type of rice you're using this may not be required, but it definitely is for the dry green lentils.  I used whatever I had left in each of the packets. There was approximately 1/2 cup of green lentils and 1/2 cup of basmati rice. But you can customize this dish to the quantity of each that you would like. For the amount of water and cooking time refer to the back of your packet. My strategy to cook lentils and rice is too complicated to explain as I always need to add more water because the instructions on the package never actually work for me. I always end up adding little bits of water throughout as the water keeps evaporating on me. If this is also you, I'm glad that I'm not the only one!  



Onto the veggie/fruit prep. The ones that found their way to the chopping block were;



  • Pineapple, diced medium. Approximately 1.5 cups. 
  • 1 yellow pepper, diced medium. You could also use a red one or a combo of both. 
  • 2 celery stalks, diced medium. 
  • 1.5 cups of sliced mushrooms 
  • 2 - 3 cloves of garlic, minced. 



Sauté above ingredients in a pan with 1 TBSP olive oil and a sprinkling of ground pepper. As the veggies are cooking get you sauce on! Ingredients & instructions found 👇🏼.



For the not-so-diabetic friendly sauce, I used; 



  • 1/4 cup rice vinegar 
  • 1/4 cup agave 
  • 1/8 cup coconut sugar
  • 1/8 cup Sriracha 
  • Dash of pepper 



Mix all the above ingredients together with a whisk. 



Once mushrooms have softened add the above mixture and the lentils. When you see that there is a bit of liquid left, add the rice and stir-fry it up! 



Serve with garnish. Whether that be green onions, a slice of lime, parsley or cilantro. Your garnish, your choice. I recommend the green onions & lime wedge! :)
