Super Bowl Sunday: Cashew Chipotle Sauce
Are you ready for some Football?! I know I most certainly am. This sauce will go with most of my Super Bowl goods that I'm going to post at some point today. FYI - This also tastes awesome heated with cooked pasta.
Ingredients for Chipotle Cashew Sauce are:
- 225 grams (1.5 cups) of raw cashews soaked in water for 2 - 3 hours.
- 3/4 cup hot water
- Juice of 1 - 2 freshly squeezed limes. I say two because some are duds in terms of juiceness.
- 1/4 cup of nutritional yeast
- 1 roasted garlic head ** (see below list of ingredients for instructions).
- 1 - 3 chipotle peppers with a bit of the adobo sauce. Serving depends on how spicy you like it; however, these peppers are quite hot. (I bought them canned at the grocery store in the Mexican Foods aisle).
- 1 tsp chilli powder
- 1/2 tsp of ground pepper
- 1/4 tsp of salt (basically just a pinch)
** For the roasted garlic preheat oven to 375 F. Slice the top of the garlic head and brush exposed top with olive oil. Bake in a small glass dish with lid for 40 - 45 minutes. It will be finished once you see the tips of the exposed cloves oozing out garlic yumminess. You can also choose to wrap in aluminium foil if you do not have a small glass baking dish with lid. Take out of oven to cool and peel each clove as they all go into the food processor.**
Instructions:
When the cashews are done soaking remove from liquid and put in food processor on low. Once cashews are all blended smooth add the other dry ingredients (nutritional yeast, chilli powder, salt & pepper) and blend on low for a few more moments. Then add 1/2 cup of hot water, the juice of two limes, roasted garlic cloves, your chipotle peppers and blend. Note: the sauce should be thick, but pourable, like a cheese sauce.
As for what this sauce will go with, just you wait and see what I have in store for Super Bowl Sunday!! I guarantee you will not be disappointed as I am going to be busy, busy in la kitchen today!
